Coconut vinegar is prepared from the coconut tree. Coconut sap known as toddy is matured in earthern pots for about one year. A hot tile with a temperature of 1000 deg. Celsius is dipped into the vinegar to acquire a brownish color and an unique taste. Maturing coconut vinegar is a very lengthy and time consuming process process. This is the only vinegar which is used in Goan cuisine.
